We present a home-style take on a beverage from our latest drinks list. It's a large-volume pre-mixed that is packed with the flavours of the Christmas time, which makes it excellent for your celebration. Reserve the remaining syrup for brunch beverages, puddings, or to mix more rounds of the drink.

Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Place the listed components in a pot, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, take off the heat and let it to cool entirely. Pour into an sterilised bottle, cap it and store in the fridge, where it will keep for around one month.
Preparing the Batch Mix: Mix all the liquids into one big jug, leave to sit for an hour, then strain preferably using cheesecloth, so it's completely strained.
To serve: Measure 85ml from the cocktail base to a stirring glass containing ice, and stir gently for a minute to chill. Filter to a chilled martini glass or similar, garnish with a few cranberries adding the final touch with a brief mist of the essential oil above the glass.
